Sweet Potato and Praline Pie
Sweet potato filling:
2 medium sweet potatoes
½ cup granulated sugar
2 large eggs, well beaten
1 teaspoon cinnamon
½ teaspoon vanilla
¼ teaspoon grated nutmeg
1/8 teaspoon salt
1/8 teaspoon ground cloves
1/2 cup sweet and condensed milk
2 tablespoons all-purpose flour
½ cup dark molasses
Praline Topping
1 cup coarsely chopped pecans
½ cup packed light brown sugar
2 tablespoons unsalted butter, melted
Filling:
Boil water in a large saucepan; cook the unpeeled sweet potatoes until tender when pierced with the tip of a knife, about 25 minutes. Allow potatoes to cool. Then mash and add milk and whip
Mix mashed sweet potatoes with sugar in a large bowl. Add eggs and beat well. Beat in the cinnamon, vanilla, nutmeg, cloves, and salt, and beat well. Beat in the flour.
Praline topping:
In a medium bowl, combine the pecans and brown sugar. Drizzle with melted butter, and combine with your fingertips until moistened and crumbly.
Pour filling into the pie crust, and then sprinkle praline topping over filling. Place in oven at 400degrees for 15minutes, then 350 degrees for 30minutes.
